My mom had a file cabinet full of clippings — from news articles to recipes. This Chocolate Square Oatmeal Cookies recipe with pecans topped off with a Hershey bar and pecan half was among them. I don’t recall if she got it from an oatmeal package or an article, but I copied it by hand from her, baked it every holiday season for years, and then…lost it. I finally located it again this holiday season and ate WAY too many of them. I should add something healthy here for the New Year, but here’s this instead. I’ll do healthy next time!
These cookies have just the right balance between crunchy and chewy, and the chocolate and pecan add even more deliciousness to the recipe. I think these are my favorite cookies ever!
Chocolate Square Oatmeal Pecan Cookies
Equipment
- 1 Baking Sheet Ungreased. I really like the Nordic Ware half sheets but any will do.
- 1 Mixer A hand mixer will do but a stand mixer is nice. My Kitchen Aid has been with me since 2002 and is still going strong.
- 1 Rubber Spatula For scraping the bowl
- 1 Baking Rack For cooling the cookies.
- 1 Something to wrap the dough in I've used plastic wrap, parchment, freezer paper…
- 1 Spatula For getting the cookies off the baking sheet!
Ingredients
- .75 cup all-purpose flour
- .5 tsp baking soda
- .5 tsp salt
- .5 cup granulated sugar
- .5 cup brown sugar firmly packed
- .5 cup shortening
- 1 egg
- .5 tsp vanilla
- 1.5 cup rolled oats regular, like Quaker's, NOT quick oats or steel cut oats
- .25 cup pecans chopped
- 1 milk Chocolate Hershey bar The regular milk chocolate ones. One bar = 12 squares. You'll need more if you make smaller cookies.
- 12 Pecan Halves Again, you may need more or less depending on how large you make your cookies.
Instructions
- Sift together the .75 cup all-purpose flour, .5 tsp salt, and .5 tsp baking soda..75 cup all-purpose flour, .5 tsp salt, .5 tsp baking soda
- Add the .5 cup granulated sugar, .5 cup brown sugar, .5 cup shortening, 1 egg, and .5 tsp vanilla..5 cup granulated sugar, .5 cup brown sugar, .5 cup shortening, 1 egg, .5 tsp vanilla
- Beat until smooth. This should be about 2 minutes.
- Stir in the 1.5 cup rolled oats and the .25 cup pecans1.5 cup rolled oats, .25 cup pecans
- Shape the dough into a 12" log. Wrap it in waxed or freezer paper or plastic wrap and stick it in the fridge to chill thoroughly; at least an hour if not more. This will make it easier to cut.
- Preheat the oven to 375 degrees when you're ready to remove the dough from the refrigerator.
- Remove from the refrigerator and slice it up. For the servings of this recipe, I sliced it into 12 equal slices. If you make smaller cookies you will need more hershey bars and pecan halves to top your cookies.
- Put the slices, spaced apart, on an ungreased baking sheet. Do NOT put the Hershey bar on yet! You'll be doing that immediately AFTER you bake the cookie.
- Bake for 10-12 minutes. In my oven, it's 12 minutes but ovens actually run at different temperatures and we're using baking sheets so check them after 10 minutes the first time you make them and see how brown they are.
- When they're done baking, remove them from the oven and immediately top each one with a Hershey bar square. Let it melt just a bit, then put a pecan half on top of that.1 milk Chocolate Hershey bar, 12 Pecan Halves
- Remove from the cookie sheets to a baking rack and let them cool.
